The sun is shining, the temps are heating up and your old familiar craving for a meaty & comforting Lasagna strikes! Why not take a little stroll away from the usual ground meat and bechamel filled Lasagna and try something more light and fresh? When Summer nears, I like to adjust my comfort staples and incorporate more veggies when possible. I came up with this recipe on a whim one afternoon a few years back, and it’s been a favorite ever since. This spin on Lasagna is still deeply comforting and satisfying, but also a bit lighter and more colorful. Nom Nom!
