My Nutella addiction is no secret. It’s serious, I’m fully committed and don’t plan to wean myself off the stuff anytime soon. So when a major Nutella craving hit the other day, I decided to bypass my usual Nutella-on-toast routine and go for the gold. These truffles are delicious! They’re decadent, crunchy and creamy at the same time, and the amount of Nutella you get in every bite is perfect. With only 5 ingredients they’re super easy to make, and trust me – they’ll make a big impact with family & friends!

Guess whooooo!? Yes, it’s me! I hope you haven’t completely forgotten me. This recent “blog break” was necessary to recharge my mind & soul after my epic Australia trip, and while I’ve had a fun Summer enjoying being back here in Chicago, I’m ready to share & inspire in this space.

Who doesn’t love a good Apple Pie?! Now, let’s take this old fave to a new, Holiday entertaining-worthy level! These individual Baked Apple Pies are super simple to make, delicious & perfect for a festive end to a Holiday dinner. Everyone always loves these, trust me…add a scoop of vanilla ice cream to each apple if you want to kick it up even more! YUM!

Homemade Almond Joy

Just because Halloween has come and gone doesn’t mean my craving for chocolate candies is satisfied! More often than not, generic grocery store chocolate candy ends up disappointing me these days….the chocolate isn’t intense enough, the fillings are often way too sweet, and the flavor balance just could be so much better (yeah, I’m that kind of candy snob!) So, in an effort to remedy this issue, I decided to make my favorite store-bought candies myself..starting with Almond Joy.

The recipe is actually pretty simple. There aren’t a lot of ingredients, and the results are delicious I tell ya!! If you’re already an Almond Joy fan you’ll be blown away by these. I found that the key secrets are to toast the coconut to bring out all of the wonderful nutty flavors and to use salted almonds for a little extra depth and to offset the sweet coconut mixture. You can choose your favorite type of chocolate for dipping, I decided to go with semi-sweet because I prefer it over milk chocolate. Try it out and let me know what you think!! Nom nom…

Do you ever find yourself craving a sweet snack (it usually happens to me mid-afternoon) and nothing will satisfy the urge until you get that chocolate bar, piece of candy or whatever else it is that squashes your sweet tooth? I normally find myself reaching for a piece of chocolate (or 2 or 3) or a big cookie…but since bikini season is imminent, I thought I’d try to develop a sweet & satisfying snack alternative that won’t make me feel so guilty.

I rummaged through my pantry for ingredients that are dense (i.e. have lots of fiber and healthy fats), have amazing health benefits (flax has a great amount of omega acids), and are satisfyingly sweet on their own without added sugars (agave nectar is a great natural sweetener). Then I played around with the proportions and came up with these fun & surprisingly delicious bite-sized balls of sweet goodness. They’re yummy, have a nice texture, are SUPER easy to make (no baking involved here!), and one will usually satisfy my sweet craving for many, many hours.

Give these a try! They’re also great as a pre-workout bite or for packing on-the-go – so you won’t grab that bag of Doritos out of desperation on your next road trip!
