Do you ever find yourself craving a sweet snack (it usually happens to me mid-afternoon) and nothing will satisfy the urge until you get that chocolate bar, piece of candy or whatever else it is that squashes your sweet tooth? I normally find myself reaching for a piece of chocolate (or 2 or 3) or a big cookie…but since bikini season is imminent, I thought I’d try to develop a sweet & satisfying snack alternative that won’t make me feel so guilty.

I rummaged through my pantry for ingredients that are dense (i.e. have lots of fiber and healthy fats), have amazing health benefits (flax has a great amount of omega acids), and are satisfyingly sweet on their own without added sugars (agave nectar is a great natural sweetener). Then I played around with the proportions and came up with these fun & surprisingly delicious bite-sized balls of sweet goodness. They’re yummy, have a nice texture, are SUPER easy to make (no baking involved here!), and one will usually satisfy my sweet craving for many, many hours.

Give these a try! They’re also great as a pre-workout bite or for packing on-the-go – so you won’t grab that bag of Doritos out of desperation on your next road trip!

Normally, I’d believe that anyone who puts the words “Luxe” and “Jello Shots” in the same sentence is clearly insane. To me, Jello Shots signify times long passed, such as rowdy college parties…who’s with me?!

…unless, we’re talking about these adorable & actually delicious Rose-Amaretto Jello Shots!! I’ve been toying with the idea of a “Grown Up” Jello Shot version for quite a bit now, and this past weekend I finally took matters into my own hands.

What a difference the right ingredients make! Choose your favorite sparkling wine or rose, add some sweet & aromatic amaretto to the mix and you have yourself a fun alcoholic treat that won’t make you look like a silly college party host.

Of course, in my world most things pink need to be accompanied by some serious sparkle, so I topped off my shots with a healthy dose of edible gold glitter. You can leave your version plain pink (great for a classy bachelorette party or bridal shower), or add some different colored sprinkles (why not bring them along to a grown-up birthday party?!)…the sky’s the limit here when it comes to your creativity!

Girl Scout Samoa Cookies

Something beautiful is happening right now. It’s Girl Scout Cookie Season (feel free to imagine me screaming this part!)!! Every year, for about 7 weeks between January and March, we can all get our fill of carb & sugar-loading deliciousness in the form of a box (or 12) of Thin Mints, Tagalongs, or my personal favorites – Samoas. I’ve been known to literally stalk the local Girl Scout Troops just so that I don’t miss their sales & end up without cookies for the Season.

But then Spring rolls around and the hoarded boxes of cookies slowly run out….what then!!?? I can’t believe it took me this long to come up with a solution – just make your own favorite Girl Scout Cookie recipe once you run out of the real deal. Don’t get me wrong, I am 100% for supporting your local Troops & buying as many boxes as you can stuff in your pantry/fridge/freezer…but for the rest of the year, making your own is the perfect cure for that cookie withdrawal we all know so well.

These absolutely taste like the real thing – amazingly crunchy, chewy, caramelly-coconutty awesome! Wish me luck at not gaining 40 pounds over the next year due to this recipe.

Do you ever feel like nothing will satisfy you like a big bowl of steaming hot soup on a particularly cold day? I’m sure we all know the feeling….I definitely do (when is Spring finally coming, Chicago!?)

On those days, I usually gravitate toward meat & noodle laden soups such as Ramen. To keep things a little lighter & healthier this weekend, I decided to make a meat-less (you can make this recipe 100% vegetarian if you use vegetable broth) but still surprisingly satisfying soup including Kale – one of the amazing superfoods out there.

It’s really easy to make & will keep for a whole week in the fridge! Find the recipe here (I cut the recipe in half for a smaller pot of soup.)

I LOVE a fresh cinnamon roll! A warm, yeasty & fragrant dough is my idea of baked perfection. It’s nice to switch old favorites up a bit every now and then, so when I stumbled upon this recipe a few weeks ago my sweet-toothed interest was piqued. Lo and behold, stuffing a light & fluffy yeast dough with a mix of berries (I added a few blackberries to the raspberry mix for a little variety) is a kick ass idea!! The tartness of the berries is such a fresh take on an old favorite. These were so delicious, they were almost eaten before I could snap an “after” picture.

Give em’ a try on a lazy Saturday or Sunday morning….you may even forget about your cinnamon roll addiction for a while.
